Make it Tonight - Pesto Pasta

This is a great dinner time recipe packed with veggies and deliciousness. Super easy and takes about 20 minutes. Use fresh pasta for best results.

Pesto Pasta with Spinach, Feta & Roasted Red Peppers


2 Tbsp olive oil
1/4 tsp chili flakes
2 shallots, diced
1-2 cloves garlic
4 fresh tomatoes, diced
4 large roasted red peppers, diced
1 tsp basil
1/4 tsp thyme
1/4 tsp parsley
freshly ground pepper
1 Tbsp pesto (homemade or store-bought)
6 cups spinach, chopped
1/2 cup feta, crumbled
1 can white beans, rinsed


1. Warm oil in large, deep pan on medium heat. Add chili flakes and onion. Saute for 4 minutes. Add garlic. Saute for 3 minutes more.
2. Add tomatoes, red peppers, basil, thyme, parsley and freshly ground pepper. Saute for 8 minutes.
3. Meanwhile, cook fresh fettuccine according to package directions.
4. Add pesto and mix with vegetables. Add spinach, feta and white beans. Put lid on pan. After 3 minutes, mix all ingredients and place lid back on for 3 more minutes.
5. Serve hot over pasta.
