Make it Tonight - Wholesome Morning Muffins


Makes 16 small or 12 large muffins

Make these yummy, wholesome muffins tonight as a healthy & delicious breakfast treat to enjoy all week! It's quick and easy. Try the recipe with bean flour and pump up the protein. You can purchase bean flour from any bulk store, some retail and specialty stores.

Sift together:

1 cup all-purposse flour
1/2 cup whole wheat flour
1/2 cup white bean or chickpea flour
1/2 cup oats
1/2 cup sugar
2 tsp baking powder
2 Tbsp cinnamon

Add:

(1 cup) 2 large carrots, grated
(2 cups) 2 apples, diced
1 cup raisins

In a separate bowl, mix:
2 bananas, mashed
2 eggs, 2 egg whites
1/4 cup ground flax seed
2 Tbsp vanilla extract

Add to flour mixture. Stir until ingredients moist.

Bake at 350 for 25 minutes or until ready - muffins are ready when a toothpick inserted into the middle of a muffin comes out clean.
