Make It Tonight - The BEST Banana Bread

And it's healthy too! This tasty dessert is packed with soluble fibre, omega-3's and potassium. Who knew healthy could be so delicious!
Follow the recipe below as is or try one of the various substitutions or additions, depending on what's in your cupboard. You can use all whole wheat flour if you like, but you may find the loaf a little dense. Try walnuts to add crunch or dark chocolate chips, my favourite ... for the antioxidants of course.

Ingredients
1/2 cup brown sugar
3/4 cup ground flax seed
5 bananas, mashed
1/4 cup skim milk
1/4 cup plain yogurt
2 egg whites
1 cup whole wheat flour
3/4 cup white flour
1 cup whole oats
1 tsp baking soda
1/2 tsp salt
Optional Items:
1/4 cup dark chocolate chips or walnuts or raisins
Instructions
  1. Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan with canola oil.
  2. Combine sugar, flax, bananas, milk, yogurt and egg whites in a large bowl. Stir until well-blended.
  3. Mix together flours, oats, baking soda and salt. Add to wet-mixture. Add optional items if desired. Stir until moistened.
  4. Pour mixture into loaf pan and bake in oven for 60 to 75 minutes, depending on oven. Loaf is done when a toothpick inserted into the centre comes out clean. Serve warm.

NOTES: If you don't have many ripe bananas, you can substitute 1/2 a cup of applesauce per banana.
